Now Y'All know Paula Deen, but no Butter this time!!

Ingredients

3 pounds short ribs
Salt and freshly ground black pepper
2 tablespoons olive oil
1 cup dry white wine
1 cup strong brewed coffee
1 large yellow onion, chopped
3 cloves garlic, chopped
2 teaspoons hot or mild chili powder
1 teaspoon dried oregano

Directions

Season the short ribs with salt and pepper, to taste. Warm the oil in a large skillet over high heat. Add the ribs and brown until golden, turning them once, about 8 minutes. Transfer the ribs to a paper towel-lined plate. Pour the wine and coffee into the skillet. Cook over high heat, scraping up the brown bits on the bottom, until the sauce is reduced by one forth, about 2 to 3 minutes.

Put the ribs, onion, garlic, 2 teaspoons salt, the chili powder and oregano in a slow cooker. Pour in the wine sauce and cook, covered, on high for 3 1/2 hours. Uncover and cook until the ribs are falling apart, about 45 minutes more. Transfer the ribs and sauce to a serving dish and serve.

Tiramisu! Enough Said!

ingredients

  • 2 cups boiling-hot water
  • 3 tablespoons instant-espresso powder
  • 1/2 cup plus 1 tablespoon sugar, divided
  • 3 tablespoons Tia Maria (coffee liqueur)
  • 4 large egg yolks
  • 1/3 cup dry Marsala
  • 1 pound mascarpone (2 1/2 cups)
  • 1 cup chilled heavy cream
  • 36 savoiardi (crisp Italian ladyfingers; from two 7-ounce packages)
  • Unsweetened cocoa powder for dusting

preparation

Stir together water, espresso powder, 1 tablespoon sugar, and Tia Maria in a shallow bowl until sugar has dissolved, then cool.
Beat egg yolks, Marsala, and remaining 1/2 cup sugar in a metal bowl set over a saucepan of barely simmering water using a whisk or handheld electric mixer until tripled in volume, 5 to 8 minutes. Remove bowl from heat. Beat in mascarpone until just combined.
Beat cream in a large bowl until it holds stiff peaks.
Fold mascarpone mixture into whipped cream gently but thoroughly.
Dipping both sides of each ladyfinger into coffee mixture, line bottom of a 13- by 9- by 3-inch baking pan with 18 ladyfingers in 3 rows, trimming edges to fit if necessary. Spread half of mascarpone filling on top. Dip remaining 18 ladyfingers in coffee and arrange over filling in pan.
Spread remaining mascarpone filling on top and dust with cocoa. Chill, covered, at least 6 hours.
Let tiramisu stand at room temperature 30 minutes before serving, then dust with more cocoa.
Cooks’ notes: •You can substitute 2 cups freshly brewed espresso for the water and instant-espresso powder.
•Tiramisu can be chilled up to 2 days.

Le Yummy Pastries with Le Cafe and Jazz for the Mornings

Good morning everyone.
As I wake up this morning I stop to take a moment to think...."Man, I wish I had a pastry with coffee today". It's almost a ritual for people to go to Starbucks, or a local Coffee Shop to buy their warm coffee and join it with a marvelous, delicious pastry like a Blueberry Muffin, Coffee Cake, Donut, or even a Biscotti, and the list goes on.
As the mantra of my mind goes..."Be Healthy, you don't exercise but at least eat healthy"....well it's tormenting at times.
So to feed my eyes and mind over images of what I wish I could eat. Here are some Pastries to indulge you all on the magnificent pastries to join your hot coffee. By the way, almost every time I drink coffee at home, it's cold??
Also, I believe that listening to Jazz in the morning is such a easy going feeling for the morning duties or before work. To accompany you on that breakfast and take you through the morning.

Meals with Coffee...Yes it gets better My Friends!

Now I am a huge fan of the Food Network, I watch it to pass on the time and avoid eating snacks or anything fatty. I was thinking the other day about the specific foods Americans eat these days and Coffee is becoming a meal replacement, because obviously we as Americans are desperately trying to shed those extra pounds.
I got on Google, simply typed in "Meals with Coffee" and of course the Food Network provides amazing recipes that incorporate our addictive coffee as a main ingredient for magnificent meals for the family.
Taking a look at the recipes from pastries to dinners, the one that made me want to go out and buy food was the "New York Strip Steak with Spicy Coffee Rub". I know...a coffee rub?? Heck I'm hoping one day a coffee scented lotion is created.

Piccolo Italia




I'm not sure how many times I have been to SF, but every time I do visit I feel I discover many new aspects of such an industrial city that comes to mind as memorable. Walking the streets feels like a small walk compared to taking a taxi or even the bus. I enjoying walking because I can discover the small shops, alley restaurants and corner shops. If you have been to SF the main spots are evident; Shopping Center in Downtown, Fisherman's Wharf, Golden Gate Bridge, etc. But what I find fascinating and most can agree is the art of the buildings themselves. Easily distinguished some of the buildings still carry the history with a modern style of today. So as I was walking down the main streets a gentleman with an accent that I can call "hollywood Italy" introduces me and my fiancé to the building. I say hollywood Italy because it simply reminded me of a film I've seen earlier with a similar accent. So we sit and take a second to quickly look at the art within the walls. There were paintings of Italian villages and women draped in the silk beauty, there was green vines surrounding the corners and even spanish music in the background? Well I assume the restaurants can do this considering most of the people who come in are foreigners and are oblivious to the culture. So I was full from eating Mexican food while watching Costa Rica loose to the evil Netherlands in the World Cup, which is why the dessert menu was up and ready to be looked at. A nice way to sooth the taste buds from spices and onions. I remember while in Spain I ordered a Tiramisu with a Cortado, great combination because it was sweet and moist the lips. So I ordered a tiramisu to try to remember the taste from Spain and indulge in the romantic scenery with my fiancé and sip the coffees that connect us both. I will say this was best for us in the day because the tiramisu was moist and sweet, had cocoa powder and a creme very sweet to the mix of a cappuccino and a cafe latte. Recommended because its a great way to end the day full of thoughts and to-do list and so far a marvelous satisfactory need.

Tiramisu fancy


This was yummy, like "diabetic" yummy, like "go to the gym ASAP" yummy. I remember sitting in the cafe and thinking,"How do Europeans stay so small?" The amount of sugar and condensed milk these things have is simply too much, or maybe Americans just think too much and should just shut up and enjoy the little things. The first taste was similar to pudding but much much more tasteful and magnificent. The Tiramisu was heaven, pure sweetness and great companion to the cortado (cafe with milk). I think I enjoyed it so much because I worry too much about what to drink or eat, "counting" calories when in fact I should just enjoy it. Of course to be healthy an all but when on vacation, there shouldn't be any boundaries, the world is a path to walk and fun with. And if a Tiramisu is on my path then by all means I will drink with a smile and wish I was European. Haha. I do recommend when traveling in Spain to ask for this delight because it is such a reward to your taste buds and you most definitely deserve it after many miles of walking and even getting lost every once in a while. 

Match made in heaven



When two people meet in the most random places, the sparks fly and the smiles sparkle on the face to show interest. Seeing the "one" can only mirror the images of romantic scenes that seem to little to be true because of the slight reality hitting the mind with discouragement. But one day as you walk into that little coffee shop in Barcelona after attempting to enter the famous church "Sagrada Familia" with no success, you find that spark in your face with a match made in heaven. The church must have rubbed off on you because the sweetness of the croissant and the creamy cappuccino makes you want to stand on the tip on the Titanic and spread your arms.....wheres DiCaprio? The two are a great couple because not only are you filled with love and calories but the match looks so amazing to be photographed! Alright, the point is that every match in the world has been known like salt and pepper, so now cappuccino and croissant are on the list.

Joy to my Soul

The first sip sent a warm and soothing feeling to my lips, throat, chest and finally my stomach; I ordered a Caramel something something that had coconut pieces drizzled on top like snowflakes in the air. The scent was warm and I felt the sudden urge to smile and unravel whatever this hot beverage held. My best friend Abdul took me here after a long night of dancing and smoking; the morning was in the beautiful 70's and the sun was out with clear blue skies, the weather sent a message of calm and relaxing Sunday. We sat in high chairs and ordered a cinnamon bun to accompany the coconut caramel coffee; my sensations were in the air for I felt the taste buds in my mouth dance as I sipped. My face was full of joy and I realized that I never catch these smiles on camera so I told Abdul to hurry and capture the moment. My smile was quite noticeably happy and joyful, I felt as if my blood was happy to run through my skin and my brain was sending the happy hormones as a reward for such a morning start.  This caramel something something coconut was a definite happy hormone upper. 


Cappuccino Break

One afternoon, I looked at my dear Aunt that drives me nuts at times but know that she is simply a mother figure, and told her that we should go for some coffee. She is also a coffee-lover and enjoys it as much as I do. So we got dressed and drove to Santana Row, a beautiful plaza that reminds me of Union Square SF, there we sat at Cocola Bakery (where I had my Con Panna Ecstasy moment) and ordered two Cappuccinos and a side meal due to lunch time. We sat outside because the decor was a French style atmosphere, french music in the background, water fountains, and the smell of coffee. A beautiful scenery that could not be missed, and we sat down to enjoy each others company along with the meal. As we took in this moment we were able to talk about issues and discuss some situations that needed to be addressed. She is very open with me about almost anything and I feel comfortable speaking to her about things that bother me, love life, careers, etc. Taking the sips of venting and caffeine, I felt as if we were growing closer to each other; I say this because I moved in with her for the summer and wanted to develop a relationship, she speaks to me as a friend, aunt and mother. So this cappuccino break was much needed since we both work during the week and sometimes weekends included; we were able to relax and enjoy the scenery because sometimes people need breaks and just sit and sip.
